Ingredients
  

For the Beef Mixture

  • 2 tablespoons Oil Can substitute with vegetable oil or olive oil.
  • 1 medium Onion Use yellow or white onion, or shallots.
  • 1 pound Ground Beef Recommend 80/20 for flavor; can substitute with turkey or chicken.
  • 1 packet Taco Seasoning McCormick brand recommended.
  • 1 can Pinto Beans Can substitute with black beans.
  • 1 can Rotel Tomatoes Can replace with diced tomatoes.

For the Creamy Layers

  • 1 cup Sour Cream Plain Greek yogurt can be a substitute.
  • 2 cups Cheddar Cheese Use freshly shredded for better melting.

For the Crunchy Topping

  • 3 cups Doritos Nacho Cheese preferred.
  • 1 teaspoon Garlic Powder Substitute with fresh garlic for a more intense taste.
  • to taste Salt Enhance flavor as needed.

Instructions
 

Preparation

  • Heat a splash of oil in a large skillet over medium heat. Once shimmering, add the diced onion and sauté until translucent, about 3-4 minutes.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Brown the meat for 8-10 minutes, until nicely cooked through.
  • Stir in the taco seasoning, drained pinto beans, and Rotel tomatoes. Allow the mixture to simmer for 2-3 minutes. Mix in sour cream, garlic powder, and salt.
  • Preheat your oven to 375°F (190°C).
  • In a baking dish, crush 1 cup of Doritos to create a base layer. Layer half of the meat mixture, followed by 1 cup of cheese, another layer of whole Doritos, remaining meat mixture, and top with cheese and whole Doritos.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 7-10 minutes until cheese is bubbly.
  • Let the casserole rest for about 5 minutes after removing it from the oven.

Notes

Optional: Garnish with fresh toppings like cilantro or diced tomatoes; serve with a dollop of sour cream for added creaminess.
