Preparation Steps

  • Preheat the oven to 425°F.

  • Toss the chicken, onion, and zucchini in the marinade. Let it sit for 15 minutes or refrigerate for up to 24 hours.
  • Transfer the mixture to a baking dish, spreading evenly.
  • Bake in the oven uncovered for 30 minutes, until chicken is cooked and zucchini is tender.
  • Serve hot, preferably with fluffy quinoa or buttery rice.

Notes
