Pie Filling

  • 6 cups fresh peaches peeled and chopped
  • 2 tablespoons lemon juice
  • 1/2 cup granulated sugar adjust according to sweetness
  • 2 tablespoons cornstarch for thickening
  • 1 tablespoon butter adds richness
  • a dash salt enhances sweetness
  • 1/2 teaspoon almond extract

Pie Crust

  • 1 9-inch baked pie shell store-bought or homemade

Preparation

  • Add the peeled and sliced peaches to a large bowl. Sprinkle with sugar and lemon juice, stirring well to combine. Let sit for 30 minutes to an hour.
  • Drain the peach juice into a measuring cup until there is 1 cup of juice. In a saucepan, whisk in cornstarch and cook over medium heat until thickened.
  • Remove from heat, stir in butter, salt, and almond extract.
  • Pour the sauce over peaches and toss. Transfer filling into baked pie shell and cover with plastic wrap. Refrigerate for at least an hour.
  • Slice the chilled pie and top with whipped cream if desired.

Notes

Refrigerate the pie for at least an hour for best flavor. Adjust sugar based on peach sweetness. Enjoy at room temperature or chilled.
