How to Make Garlic Butter Lamb Chops

  • Remove the lamb loin chops from the fridge 20-30 minutes before cooking. Pat them dry with paper towels and season with salt and black pepper.
  • Heat a cast iron skillet over medium-high heat until hot. Place the seasoned chops in the skillet, fat-side down, pressing lightly until it's crispy, about 5 minutes.
  • Flip the chops and sear each side for an additional 3 minutes, ensuring they are beautifully browned.
  • Lower the heat to medium-low and spoon off excess fat. Add the unsalted butter, minced garlic, and chopped thyme to the skillet. Stir until the butter foams and spoon this over the chops for 1 minute.
