How to Make Greek Orzo Salad

  • Begin by bringing a large pot of salted water to a rolling boil. Add the dry orzo pasta and cook according to the package instructions, aiming for a texture that is just slightly past al dente. Drain and toss with a splash of olive oil to prevent sticking, then spread it on a baking sheet to cool.
  • In a small bowl, whisk together red wine vinegar, fresh lemon juice, oregano, and sea salt to create your zesty Greek dressing. Taste and adjust the seasoning if needed.
  • In a large mixing bowl, combine the cooled orzo, diced Persian cucumbers, halved cherry tomatoes, cooked chickpeas, crumbled feta cheese, thinly sliced red onion, and Kalamata olives.
  • Drizzle the Greek dressing over the salad mixture, tossing gently to combine everything evenly. Add in half of your fresh herbs and season with freshly ground black pepper for that extra kick of flavor.
