How to Make Kielbasa Sausage

  • Combine the ground meat, grated onion, grated garlic, chopped bay leaves, yellow mustard seeds, salt, and ground pepper in a large mixing bowl. Use your hands to mix thoroughly until all ingredients are well integrated; take about 5-10 minutes for the best result.
  • Rinse the sausage casings under cold water. This step removes excess salt and prepares them for filling. Aim for a few minutes of running water to ensure they’re clean and pliable.
  • Assemble the grinder by removing the cutting knife and attaching the stuffer. Secure the sausage casing onto the stuffer, making sure it’s tightly fastened to avoid any spillage during filling.
  • Fill the grinder with the seasoned meat mixture. While gently holding the sausage casing taut, slowly push down the meat mixture with the plunger. This may take some time, but it’s essential to create a firm, well-filled sausage casing.
  • Tie the filled casing by pulling it off the stuffer and tying the loose end in a knot. If making links, twist the casing tightly at intervals to form individual sausages.
  • Preheat your oven to 350°F. Place the sausages on a baking tray, then poke small holes in them with a toothpick to prevent bursting while baking.
  • Bake the kielbasa sausages in the preheated oven for 30 minutes, or until they turn a beautiful golden brown.

Notes
