Ingredients

  • 1 tsp Kosher Salt
  • 3 large Eggs
  • 2 cups Granulated Sugar Reduce for a less sweet cake.
  • 1 cup Canola Oil Vegetable or melted coconut oil can be used.
  • 2 tsp Pure Vanilla Extract Opt for pure for best results.
  • 3 large Ripe Bananas Mashed, overripe bananas work best.
  • 1 8 oz can Crushed Pineapple In juice, drain excess liquid if preferred.
  • ¾ cup Shredded Coconut Unsweetened coconut can be used for a less sweet cake.
  • 1 cup Chopped Pecans Toasted, can substitute walnuts or omit for nut-free.

For the Frosting

  • Cream Cheese Frosting Essential for icing.

For the Garnish

  • Toasted Whole Pecans Optional decorative touch.
  • Sweetened Coconut Optional decorative touch.

Steps

  • Preheat your oven to 350°F (175°C) and prepare three 8-inch cake pans with cooking spray and parchment paper.
  • In a large mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and kosher salt until combined.
  • In another bowl, cream together the granulated sugar, canola oil, large eggs, and pure vanilla extract until fluffy.
  • Gently stir in the mashed bananas, crushed pineapple, and shredded coconut until mixed.
  • Fold the dry ingredient mixture into the wet ingredients carefully, ensuring no dry flour remains.
  • Fold in the toasted pecans if using.
  • Divide the batter evenly into the prepared pans and bake for 30-35 minutes until golden brown.
  • Allow the cakes to cool in the pans for about 30 minutes before transferring to a wire rack to cool completely.
  • Once cooled, layer and frost the cake with cream cheese frosting, adding garnishes if desired.
  • Optional: Drizzle caramel sauce over the top for added sweetness.

Notes

Use overripe bananas for best results and ensure cakes are completely cooled before frosting to prevent melting.
