For the Pasta

  • 2 cups uncooked farfalle pasta use any pasta shape preferred

For the Vegetables

  • 1 cup fresh peas frozen and thawed are an alternative
  • 1 medium carrot diced
  • 1 medium cucumber peeled and diced
  • 1 medium red bell pepper diced
  • 1 cup steamed corn kernels canned corn works too

For the Dressing

  • 1/4 cup extra virgin olive oil substitute with avocado oil
  • 2 tablespoons lemon juice optional, apple cider vinegar can be used
  • 1 teaspoon salt to taste

How to Make Kid Friendly Pasta Salad

  • Bring a pot of salted water to a rolling boil and add your farfalle pasta. Cook for about 10 minutes or until al dente.
  • Once cooked, drain the pasta and rinse under cold water to stop the cooking process.
  • While the pasta cools, dice your carrot, cucumber, red bell pepper, and measure out the peas and corn.
  • In a large mixing bowl, add the cooled pasta and all the chopped vegetables. Toss them gently together.
  • Drizzle the extra virgin olive oil and lemon juice over the pasta mixture. Sprinkle in the salt, then mix everything well.
  • Serve immediately at room temperature or chill for a refreshing treat later.
