Preparation

  • Carefully cut the top shell of the lobster tails and crack the ribs. Next, gently butterfly the meat for an elegant presentation and even cooking.
  • Position the oven rack in the upper third and preheat your broiler on high.
  • In a mixing bowl, combine finely chopped parsley, pressed garlic, Dijon mustard, salt, freshly cracked black pepper, olive oil, and fresh lemon juice.
  • Place the butterflied lobster tails in a roasting pan, pour marinade generously over each tail.
  • Slide the pan into the preheated oven and broil the lobster tails for 10-11 minutes.
  • Collect drippings and combine with remaining unsalted butter for the dipping sauce.
  • Transfer the lobster tails to a serving platter and garnish with additional chopped parsley.
