How to Make Neapolitan Cake

  • Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing them and lining with parchment paper.
  • In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.
  • In a separate bowl, whisk the large eggs, milk, and vanilla extract until well combined.
  • Gradually pour the wet ingredients into the dry mixture. Stir gently until just combined.
  • Separate the batter into three bowls. Stir melted chocolate into one bowl, puree strawberries into another, and leave the third bowl as vanilla.
  • Pour each batter into the prepared pans and bake for 25-30 minutes. Check for doneness with a toothpick.
  • Allow the baked layers to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
  • In a mixing bowl, beat together the cream cheese and powdered sugar until smooth and creamy.
  • Once cooled, place the chocolate layer on a serving plate and spread a layer of frosting on top.
  • Add the vanilla layer, frost, and then top with the strawberry layer for a beautiful presentation.
  • Pop the assembled cake in the refrigerator for at least 30 minutes before serving.

Notes

Garnish with fresh berries or chocolate ganache for an elegant touch. Ensure each layer is cool before frosting to maintain structure.
