  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • tsp salt
  • ½ cup sugar
  • 2 pieces eggs
  • ½ cup light olive oil
  • 1 cup yogurt Greek yogurt works great!
  • 1 ½ cups fresh peaches (chopped)
  • ½ tsp Demerara sugar (optional) For topping

How to Make Peach Muffins

  • Preheat your oven to 350ºF (175ºC).
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the eggs, light olive oil, and yogurt together until smooth.
  • Gently pour the yogurt mixture into the dry ingredients and fold until just combined.
  • Gently stir in the chopped fresh peaches until evenly distributed throughout the batter.
  • Spoon the batter into greased muffin cups, filling each about two-thirds full, and sprinkle Demerara sugar if using.
  • Bake for 18 to 20 minutes or until golden brown and a toothpick comes out clean.

Notes

Use ripe but firm peaches for best results. Store in an airtight container for up to 3 days or freeze for up to 3 months.
