  • 1 packet ranch seasoning mix
  • 1 cup diced red bell pepper or green bell pepper
  • 1/2 cup diced jalapeƱos adjust for spice level
  • 1/2 cup black olives diced
  • 1 cup fire-roasted corn or fresh corn
  • 1/4 cup green onions save some for garnish

Serving Suggestions

  • 1 bag tortilla chips for dipping
  • 1 cup fresh veggies like carrot sticks, cucumber slices, bell pepper strips

How to Make Poolside Dip

  • In a mixing bowl, stir together the softened cream cheese and ranch seasoning until smooth and creamy, about 2-3 minutes.
  • Carefully fold in the diced red bell pepper, jalapeƱos, black olives, fire-roasted corn, and green onions.
  • Use a spatula to spread the mixture into a serving dish, or serve straight from the bowl.
  • Chill in the fridge for at least 30 minutes for flavors to meld, if desired.
  • Just before serving, sprinkle additional green onions on top for a fresh touch.

Notes

Store in an airtight container for up to 3 days. Freeze for up to 2 months. Best served chilled or at room temperature.
