How to Make Pumpkin Muffins

  • Preheat the oven to 350°F (175°C) and prepare your muffin pan by greasing it or lining it with paper liners.
  • Soak the dried raisins in hot water for about 10 minutes to rehydrate them, then drain well.
  • Combine the dry ingredients in a large mixing bowl: whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt.
  • Create a well in the center of the dry ingredients and add in the canned pumpkin, eggs, vegetable oil, and honey. Mix gently until just combined.
  • Fold in the rehydrated raisins and chopped walnuts gently until evenly distributed throughout the batter.
  • Scoop the batter into muffin cups, filling them about two-thirds full. Bake for approximately 18 minutes.
  • Cool the muffins in the pan for about five minutes before transferring them to a wire rack to cool completely.

Notes

Optional: Drizzle with a little honey or maple syrup for an extra touch of sweetness!
