How to Make Rhubarb Bars

  • Preheat your oven to 350°F. Line the bottom of an 8x8" pan with parchment paper, letting it extend up the sides.
  • Process the crust ingredients. Combine 1 cup of flour, 1/2 cup of sugar, and 1/2 cup of cold butter in a food processor. Pulse until it resembles fine crumbs, then press the mixture evenly into the prepared pan. Bake for 15 minutes.
  • Whisk the filling together while the crust bakes. In a mixing bowl, combine 2 large eggs, 1 cup sugar, 1/4 cup flour, and 1/4 tsp. salt. Beat vigorously, then gently fold in 2 cups of diced rhubarb.
  • Pour the rhubarb filling over the hot crust. Spread it evenly and return the pan to the oven. Bake for 40-45 minutes until the filling sets and turns golden.
  • Cool the bars completely before lifting them out using the parchment paper. Cut into squares for serving.
