Ingredients
  

For the Crust

  • 1 cup all-purpose flour
  • 0.5 cup sugar
  • 0.5 cup cold butter

For the Filling

  • 2 large eggs
  • 1 cup sugar
  • 0.25 cup flour
  • 0.25 tsp salt
  • 2 cups diced rhubarb

Preparation

  • Preheat the oven to 350°F. Line the bottom of an 8x8" pan with parchment paper.
  • Whirl the crust ingredients in a food processor until well combined. Press into the prepared pan and bake for 15 minutes.
  • Mix together eggs, sugar, flour, and salt in a bowl. Stir in diced rhubarb until incorporated.
  • Pour the filling over the hot crust and bake for an additional 40-45 minutes.
  • Cool the bars in the pan, then cut into squares and enjoy!

Notes

Optional: Dust the top with powdered sugar for an elegant finish.
