Ingredients
  

For the Sauce

  • 650 grams rhubarb cut into 1/2 inch pieces
  • 130 grams cane sugar or substitute with honey
  • 1/4 teaspoon fine sea salt

For the Flavoring

  • 4 strips fresh orange peel or substitute with lemon peel
  • 1/2 teaspoon vanilla bean paste or use vanilla extract

How to Make Rhubarb Sauce

  • Prepare the Rhubarb: Cut the rhubarb into 1/2 inch pieces, combine with sugar, salt, and orange peel. Allow to rest for 30 minutes.
  • Simmer the Mixture: Pour the mixture into a medium pot and simmer over medium heat for about 10 minutes until rhubarb softens.
  • Blend to Perfection: Discard the orange peel and blend the rhubarb mixture until smooth.
  • Finish with Vanilla: Stir in the vanilla bean paste until well mixed.

Notes

Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months. Add a splash of water when reheating if sauce thickens too much.
