Cooking Directions

  • Heat 2 tablespoons of extra-virgin olive oil in a large pot over medium-high heat.
  • Add 1 chopped onion, 2 diced carrots, and 2 chopped celery stalks. Cook for 3-4 minutes until softened.
  • Stir in 3 minced garlic cloves and sauté for another minute.
  • Pour in 2 cups of rinsed dried split peas, 1 teaspoon of dried thyme, 1 teaspoon of kosher salt, and ½ teaspoon of freshly ground black pepper. Stir well.
  • Add 1 bay leaf, a meaty ham bone, 6 cups of low-sodium chicken broth, and 3 cups of water. Bring to a boil.
  • Reduce heat to low, cover the pot, and let it simmer for 50-60 minutes, stirring occasionally.
  • Remove the ham bone, chop any remaining meat from it, and return that meat to the pot.
  • Simmer uncovered for another 5-15 minutes, then discard the bay leaf before serving.
  • Optional: Garnish with freshly chopped parsley.

Notes

This recipe is perfect for using up leftovers and can be customized with turkey or additional vegetables for extra nutrition.
