How to Make Fresh Spring Rolls

  • Begin by bringing a pot of water to a rolling boil. Once boiling, add the vermicelli rice noodles and cook according to package instructions, usually about 3-5 minutes. Drain and rinse them with cool water to stop the cooking process.
  • If you're using shrimp, slice them into halves or thirds for easier rolling. Alternatively, if using tofu, cut it into thin strips and set aside.
  • Fill a shallow dish with warm water and gently dip a spring roll wrapper in it for 8-10 seconds, just until it begins to soften. Remove it and lay it flat on a damp surface.
  • On the softened wrapper, start layering your fillings. Place a few lettuce leaves as a base, add a handful of noodles, followed by shredded carrots, cucumber, herbs, and shrimp or tofu on top.
  • Carefully fold the sides of the wrapper inward, then roll it away from you tightly, ensuring all the fillings are securely tucked inside.
  • In a bowl, combine brown sugar with a few tablespoons of hot water until dissolved. Then add creamy peanut butter, soy sauce, seasoned rice vinegar, toasted sesame oil, chili garlic sauce, and ground ginger. Mix until smooth, adjusting with more water for desired consistency.
  • In another bowl, mix granulated sugar with hot water. Add optional minced garlic, fish sauce, lime juice, and sesame oil to combine. Adjust sweetness according to your taste.
  • Plate your fresh spring rolls alongside the dipping sauces and enjoy the delightful contrast of flavors!
