How to Make Strawberry Pie

  • Preheat your oven and bake the pie crust according to the package instructions. Allow it to cool completely before you start preparing the filling.
  • Cut the fresh strawberries in half. Reserve half of them in a large bowl for later use, and set the bowl aside.
  • In a medium saucepan, combine the remaining strawberries with granulated sugar, 1/4 cup of water, and lemon juice. Stir until well mixed, then mash the strawberries into a chunky mixture. Cook over medium heat, bringing it to a boil while stirring occasionally for about 5-7 minutes.
  • Reduce the heat to medium-low. In a small bowl, dissolve 5 tablespoons of cornstarch in the remaining 1/4 cup of water. Stir this slurry into the strawberry mixture and simmer until it becomes translucent and thickened, around 5 minutes. Remove from heat and let it cool for about 10 minutes.
  • Pour the thickened mixture over the reserved strawberries in the bowl, tossing gently to coat them well. Next, pour this fruit filling into the cooled pie crust. Gently jiggle the crust to ensure even distribution and eliminate any air gaps. Smooth out the top with a spatula for an even finish.
  • Cover the pie and place it in the refrigerator to chill for at least 3 hours or until set. Slice and enjoy with a generous dollop of sweetened whipped cream.

Notes

Garnish with fresh mint leaves for an added touch of charm. Store leftovers at room temperature for up to 1 day or refrigerate for up to 3 days.
