Preparation

  • Preheat your oven to 200°F. Spread your baguette cubes in a single layer on a baking sheet.
  • Toast the bread cubes in the oven until golden and dried, about 2 hours.
  • Soak your dried cranberries in vegetable broth and sherry vinegar for at least 30 minutes.
  • Sauté diced Vidalia onion and minced fresh sage in olive oil over medium heat until translucent. Add pecans and toast lightly.
  • Add soaked cranberries (with any remaining broth) to the skillet and mix until heated through.
  • Whisk together eggs, remaining broth, apple juice, black pepper, and kosher salt in a bowl.
  • In a large bowl, combine toasted bread, onion-pecan mixture, and sage, then fold in the egg mixture.
  • Transfer the mixture to a greased 9x13-inch baking dish and bake at 350°F for 35-45 minutes.
  • Let the stuffing cool for about 5 minutes before serving.

Notes

Optional: Garnish with extra chopped sage before serving.
