  • 5 cups seedless watermelon cubed
  • 1/3 cup liquid sweetener honey or agave work beautifully
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon kosher salt

How to Make Watermelon Sorbet

  • Line a rimmed baking sheet with parchment or wax paper. Spread 5 cups of cubed watermelon evenly on the sheet, then place it in the freezer for about 3 hours, or until solid.
  • Once the watermelon is frozen solid, combine it in a food processor with 1/3 cup of liquid sweetener, 2 tablespoons of freshly squeezed lime juice, and 1/4 teaspoon of kosher salt. Process until the bottom is smooth and the top remains slightly chunky, about 1 minute.
  • Stop to scrape down the sides of the processor. Blend again until the mixture is fully smooth and creamy, which usually takes another 4 to 6 minutes.
  • For a delightful soft-serve consistency, enjoy immediately. If you prefer it firmer, transfer the sorbet to an airtight container or loaf pan. Press a sheet of parchment or wax paper onto the surface and freeze for an additional 2 to 3 hours.

Notes
