  • 1 cup natural, runny peanut butter no sugar added
  • 1/2 cup maple syrup
  • 1 cup powdered sugar
  • 1/2 cup almond flour gluten-free
  • 1 teaspoon vanilla extract
  • 1 pinch salt

For the Coating

  • 2 cups white chocolate melting wafers
  • 2 tablespoons coconut oil
  • 1 teaspoon blue spirulina
  • 1 teaspoon matcha powder
  • 1 tablespoon cocoa powder
  • 2 tablespoons water

How to Make Peanut Butter Easter Eggs

  • In a mixing bowl, beat together the peanut butter, maple syrup, powdered sugar, almond flour, vanilla extract, and salt until well combined and smooth.
  • Portion the peanut butter filling into 2-tablespoon portions. Roll each portion into a ball and delicately shape it into an oval, resembling an egg.
  • Place the formed eggs on a parchment paper-lined baking sheet and freeze while preparing the coating.
  • In a small bowl, whisk together the cocoa powder and water and set aside.
  • Add the white chocolate and coconut oil to a microwave-safe bowl. Microwave in 15-20 second intervals, stirring well each time, until melted and smooth.
  • Coat the semi-frozen eggs in the white chocolate.
  • To create decorative speckles, dip a pastry brush in the cocoa powder/water mixture and flick it over the eggs.
  • Refrigerate until the chocolate sets, about 10 minutes.

Notes

For added flavor, drizzle melted chocolate over the eggs before serving.
