How to Make Rhubarb Cake

  • Cream together the softened salted butter, brown sugar, and granulated sugar in a medium mixing bowl until light and fluffy.
  • Beat in the large egg until fully incorporated.
  • Stir in the buttermilk and vanilla extract until the mixture is uniform.
  • Mix in the dry ingredients (all-purpose flour, baking soda, salt) slowly until just combined.
  • Fold in the chopped rhubarb gently.
