How to Make Cranberry Bread

  • Preheat your oven to 350°F (175°C) and prepare two loaf pans by greasing and flouring them.
  • Roughly chop your fresh cranberries and set them aside.
  • In a large mixing bowl, beat the eggs and sugar together on medium-high speed for about 5 minutes until pale and fluffy.
  • Gradually add the softened butter to the mixture and mix until smooth, then stir in the vanilla and almond extracts.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Add the dry ingredients to the wet mixture just until combined without overmixing.
  • Gently fold in the chopped cranberries.
  • Divide the batter evenly between the prepared loaf pans.
  • In a small bowl, mix together the cold butter, brown sugar, and a touch of flour until it resembles breadcrumbs.
  • Sprinkle the streusel topping evenly over the batter and bake for 45-50 minutes.
  • Cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely.
