Making the Loaf

  • Preheat your oven to 350°F (176°C) and grease a 9x5 inch loaf pan.
  • In a medium bowl, beat unsalted butter and white sugar until light and fluffy, about 3-4 minutes.
  • Mix in large eggs, whole milk, pure vanilla extract, medium lemon juice, and zest of large lemons until smooth.
  • In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  • Form a well in the dry ingredients, pour in the wet mixture, and gently combine without overmixing.
  • Fold in fresh blueberries and diced cream cheese until evenly distributed.
  • Pour the batter into the loaf pan and bake for 60-70 minutes, until a skewer inserted comes out clean.
  • Let the loaf cool in the pan for about 20 minutes, then transfer to a wire rack to cool completely.
