Ingredients
  

For the Crust

  • 1 cup graham cracker crumbs
  • 5 tablespoons unsalted butter melted

For the Filling

  • 1 can sweetened condensed milk
  • 3/4 cup freshly squeezed lemon juice
  • 3 large egg yolks
  • 1 tablespoon lemon zest
  • 1 pinch salt

For the Topping

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350℉ and lightly grease a 9-inch pie plate.
  • Combine graham cracker crumbs and melted butter in a bowl, press firmly into the pie plate.
  • Bake the crust for 8 minutes until dry and firm.
  • In a bowl, whisk together sweetened condensed milk, lemon juice, egg yolks, lemon zest, and salt for 2-3 minutes until combined.
  • Pour the filling into the baked crust and bake for 12-15 minutes until set.
  • Cool the pie on a wire rack and then chill in the refrigerator for at least 4 hours.
  • Whip the heavy cream until soft peaks form, then add powdered sugar and vanilla, and beat until stiff peaks form.
  • Top the chilled pie with whipped cream and serve.
