How to Make Easy Spinach Quiche

  • Prepare the Crust: Roll out your pie dough on a floured surface, fit it gently into a pie dish, and trim any excess. Crimp the edges for a lovely finish, then place in the refrigerator to chill while you preheat the oven to 425°F.
  • Blind Bake the Crust: Prick the bottom of the chilled dough with a fork. Line with parchment paper and fill with pie weights or beans. Bake for 15 minutes, then carefully remove the weights and parchment, returning to the oven for an additional 5-8 minutes until the crust is lightly set and golden.
  • Prepare Spinach Filling: Steam the fresh spinach in a skillet until wilted, approximately 1-2 minutes. Wring out excess moisture to keep your quiche from getting soggy.
  • Mix Filling: In a large bowl, whisk together the eggs and milk until smooth. Gently fold in the steamed spinach, crumbled feta or goat cheese, chopped green onions, salt, and pepper, ensuring an even distribution.
  • Assemble and Bake: Pour the filling into your pre-baked crust, spreading it out evenly. Bake in a 350°F oven for 40-50 minutes, or until the filling is firm and just set in the center. Allow the quiche to cool for at least 10 minutes before slicing to ensure clean cuts.
  • Optional: Garnish with additional green onions for a fresh touch before serving.

Notes

Store leftover quiche in an airtight container in the refrigerator for up to 3 days, or wrap tightly and freeze for up to 3 months.
