Ingredients
  

For the Cake

  • 2 cups Freshly grated carrots Avoid pre-shredded carrots.
  • 1 cup Brown sugar Can substitute with white sugar.
  • 1/2 cup Neutral oil Can use vegetable or canola oil.
  • 1 cup Granulated sugar
  • 3 large Eggs Binding agent for structure.
  • 1 teaspoon Vanilla extract Use pure vanilla for best results.
  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Ground nutmeg
  • 1/2 teaspoon Kosher salt

For the Frosting

  • 1 cup Unsalted butter Needs to be at room temperature.
  • 4 cups Confectioners’ sugar
  • 2 tablespoons Heavy cream Adjusts frosting consistency.
  • 2 cups Sweetened shredded coconut More can be added for decorating.

For Decoration

  • 2 cups Rice Krispies Treats Used to create bunny ears.
  • 1 cup Jelly beans For decoration.
  • Food coloring For decoration.

How to Make Bunny Cake

  • Preheat your oven to 350°F (175°C). Prepare an 8" round cake pan with a light coat of oil or butter.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground spices, and kosher salt.
  • In another bowl, mix together granulated sugar, brown sugar, neutral oil, eggs, and vanilla extract until well blended. Fold in the freshly grated carrots gently.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before frosting.
  • For the frosting, beat the unsalted butter until creamy. Gradually add in the confectioners’ sugar and heavy cream, mixing until smooth.
  • Shape your cake into a bunny form. Frost with a light layer of coconut frosting, then chill briefly. Add a thicker layer of frosting and decorate with shredded coconut and candies.

Notes

Use freshly grated carrots for moisture, avoid pre-shredded ones. Decorate freely with your favorite candies.
