Ingredients
  

For the Cookies

  • 1 cup unsalted butter softened at room temperature
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 2 teaspoons vanilla extract homemade or store-bought
  • 2.5 cups all-purpose flour spooned into the measuring cup
  • 1 teaspoon baking powder aluminum-free preferred
  • 1/2 teaspoon salt to enhance sweetness

For the Icing

  • 2 cups powdered sugar adjust for desired texture
  • 1/4 cup milk add gradually
  • 1 teaspoon vanilla extract optional
  • gel food coloring optional for coloring

Instructions
 

Cookie Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a separate bowl, beat the softened unsalted butter and granulated sugar together until light and creamy.
  • Mix in the large egg and vanilla extract, blending until well-combined.
  • Gradually add the dry ingredients to the butter mixture, mixing until fully incorporated.
  • Divide the dough into manageable portions and roll out to 1/4 inch thick. Use cookie cutters to create shapes.
  • Place the cut-out cookies on the baking sheet and bake for 10-11 minutes.
  • Allow cookies to cool on the baking sheet for about 5 minutes before transferring to wire racks.

Icing Preparation

  • In a mixing bowl, combine powdered sugar, milk, and optional vanilla extract until smooth.
  • Divide the icing into bowls and tint with gel food coloring if desired.
  • Ice your cookies as desired and add pastel sprinkles while the icing is still wet.

Notes

For added charm, pipe designs on your cookies with the icing. Allow cookies to cool completely before icing to avoid mess.
