Preparation Steps

  • Start by chopping the cabbage into bite-sized pieces, dicing the onion, and thinly slicing the carrots.
  • In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until soft and translucent.
  • Stir in minced garlic and cook for an additional 30 seconds.
  • Toss in the sliced carrots and chopped cabbage, stirring together for about 2 minutes.
  • Pour in the vegetable broth, add kosher salt, ground black pepper, and dried thyme. Bring to a gentle boil, then reduce heat to simmer for 10-15 minutes.
  • Taste the soup and adjust seasonings as needed.
  • Ladle the soup into bowls, garnishing with chopped parsley and a lemon wedge on the side.
