Ingredients
  

  • - 1 cup instant rice cooked
  • - 1 lb ground beef
  • - 2 green bell peppers chopped
  • - ½ cup yellow onion diced
  • - 1 jar 26 oz marinara sauce
  • - 1½ tsp salt-free seasoning or Italian blend
  • - ½ cup shredded Italian cheese
  • - ½ cup seasoned breadcrumbs
  • - 1 tbsp olive oil

Instructions
 

  • Preheat oven to 350°F. Cook rice according to package directions.
  • In a large ovenproof skillet, brown beef, peppers, and onion over medium-high heat. Drain fat.
  • Stir in cooked rice, marinara sauce, seasoning, and cheese.
  • Mix breadcrumbs with olive oil and sprinkle on top.
  • Bake for 8–10 minutes until golden and bubbling.
  • Serve warm with salad or bread.

Notes

- Substitute rice with cauliflower rice for a low-carb version
- Use turkey or plant-based ground meat as desired
- Freezes well for meal prep
