Directions

  • Preheat your oven to 325°F.
  • In a mixing bowl, mash the very ripe bananas until smooth.
  • In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
  • In a stand mixer, combine sugar and eggs and mix on medium speed for about 5 minutes.
  • Reduce mixer speed to low and slowly drizzle in canola oil and melted butter.
  • Mix in the mashed bananas, sour cream, and vanilla extract.
  • Gently fold the dry ingredients into the wet mixture.
  • Butter a 9x5 loaf pan and lay parchment paper in it, then butter the parchment.
  • Pour the banana bread batter into the prepared loaf pan.
  • Bake for 1 hour, and check the center. If jiggly, continue baking in 10-minute intervals.

Notes

Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.
