Ingredients
  

For the Marinade

  • 1/4 cup Olive Oil Can substitute with avocado oil
  • 2 pieces Chicken Breast Can substitute with turkey or chickpeas
  • 3 cloves Garlic Can substitute with garlic powder
  • 2 tablespoons Lemon Juice Can substitute with lime juice
  • 1 tablespoon Dried Oregano Marjoram can also be a substitute
  • to taste Salt & Pepper Essential for seasoning

For the Bowl

  • 2 cups Rice or Quinoa Can substitute with cauliflower rice
  • 2 cups Fresh Vegetables (e.g. cucumbers, tomatoes, red onions) Use any seasonal vegetables

For the Tzatziki

  • 1 cup Greek Yogurt Can substitute with dairy-free yogurt
  • 1 clove Garlic Use fresh for bold flavor
  • 2 tablespoons Lemon Juice Can substitute with lime juice

  • In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  • Pound the chicken breasts to about 1/2 inch thickness, then marinate for at least 30 minutes.
  • Combine Greek yogurt, diced cucumbers, minced garlic, lemon juice, and salt in a bowl; set aside.
  • Cook rice or quinoa according to package instructions and chop fresh vegetables.
  • Preheat the air fryer to 380°F. Air fry the chicken for 7 minutes, then flip and cook for another 3-4 minutes.
  • Allow the chicken to rest for 5 minutes, then slice into strips.
  • Assemble bowls starting with a base of rice or quinoa, adding fresh veggies, sliced chicken, and tzatziki on top.

Notes

Optional: Sprinkle with fresh herbs like parsley or dill for extra flavor.
