How to Make Fluffy Pancakes

  • In another bowl, mix the beaten egg, milk, melted butter, and pure vanilla extract.
  • Pour the wet mixture into the dry ingredients. Stir gently until mostly combined.
  • Let the batter rest for 5-10 minutes.
  • Preheat a non-stick pan over low-medium heat and lightly oil it. Pour a quarter-cup of batter into the pan.
  • Cook until edges look set and bubbles form, then flip and cook until golden brown.
