Ingredients
  

  • - 3–4 lb chuck roast
  • - 3 large yellow onions sliced
  • - 4 cups low-sodium beef broth
  • - 5 garlic cloves minced
  • - 2 tsp dried thyme or 1 tbsp fresh
  • - 2 bay leaves
  • - 2 tbsp olive oil
  • - Salt and pepper to taste
  • - 1 tbsp Worcestershire sauce
  • - 1 tbsp balsamic vinegar

Instructions
 

  • Preheat oven to 325°F (160°C).
  • Heat olive oil in a Dutch oven. Season roast and sear 3–4 min per side. Remove.
  • Add onions and garlic to pot; cook until golden (10 min).
  • Return roast. Add broth, Worcestershire, vinegar, thyme, bay leaves. Simmer.
  • Cover and bake 3 hrs, or until fork-tender.
  • Let rest 15 min. Slice and serve with onions and broth.

Notes

- Add ½ cup red wine for richer flavor
- Pairs well with mashed potatoes or green beans
- Leftovers freeze well for up to 3 months
