How to Make Fudgy Chewy Brookies

  • Preheat the Oven: Set your oven to 160°C (320°F) for a fan oven, or 170°C (338°F) for conventional.
  • Melt Chocolate and Butter: In a heatproof bowl over simmering water, combine dark chocolate and butter until smooth.
  • Whip Eggs and Sugars: Beat eggs with demerara and granulated sugars until light and fluffy, about 5 minutes.
  • Combine Dry Ingredients: Sift together flour, cocoa powder, baking powder, and salt. Fold in chocolate chips.
  • Integrate Mixtures: Fold melted chocolate mixture into eggs, then gently fold in dry ingredients until combined.
  • Bake: Scoop batter onto a lined tray, leaving space for spreading. Bake for 12-14 minutes until tops are set.
  • Cool: Allow brookies to cool for about 10 minutes on the tray.
