How to Make Funfetti Cheesecake

  • Preheat your oven to 350°F. Weigh and split the Funfetti cake mix in half, using half for the crust and setting the other half aside for icing.
  • In a large mixing bowl, blend the softened cream cheese and sugar until smooth. Then, add the large eggs, sour cream, pure vanilla extract, and a pinch of salt, mixing until silky.
  • Spread the cheesecake filling evenly over your cooled Funfetti cake mix crust, ensuring the mixture is smooth and evenly distributed.
  • Place the cheesecake in the preheated oven and bake for approximately 1 hour. Check for doneness; the edges should be set, but the center might still look slightly jiggly.
  • Once baked, allow the cheesecake to cool on a wire rack for at least 20 minutes before further chilling to help prevent cracks.
