  • 2 large lemons zest and juice
  • 1 teaspoon dried thyme or substitute with oregano or rosemary

  • 2 cups baby potatoes halved; sweet potatoes can be substituted
  • 1 medium red onion sliced; shallots as an alternative
  • 1 cup green beans trimmed; can substitute with broccoli
  • 1 tablespoon balsamic vinegar adds acidity to balance flavors

Cooking Steps

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried thyme, salt, and pepper. Toss the chicken thighs in this mixture until well coated.
  • Place the marinated chicken thighs skin-side up on a large sheet pan, ensuring they are spaced out for even roasting.
  • In the same bowl, toss the halved baby potatoes, sliced red onion, and green beans with balsamic vinegar, salt, and pepper. Surround the chicken with these veggies on the sheet pan.
  • Roast in the oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F and the veggies are tender.
  • Allow the chicken to rest for a few minutes before serving alongside the roasted vegetables.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before roasting.
