How to Make Gingerbread Cookies

  • Beat the softened butter with brown sugar and molasses for about 2 minutes until it’s fluffy. Then, add in the egg and vanilla, mixing until just combined.
  • In a separate bowl, whisk together the flour, spices, baking soda, and any optional ingredients until everything is well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just blended. Be careful not to overmix, as this will affect the texture.
  • Divide the dough in half and shape each half into a disc. Wrap them in plastic wrap and refrigerate for 2-3 hours until firm.
  • Preheat your oven to 350°F (175°C). Roll out the chilled dough to about 1/4" thickness between two sheets of parchment paper.
  • Use cookie cutters to cut out shapes and transfer them to baking sheets. Bake for 9-10 minutes or until just set. Cool on the sheets for 5 minutes before transferring to wire racks.
