  • 1 cup powdered sugar Ensure it's sifted for an even dusting.

  • ¾ cup unsalted butter Use room temperature butter for easier mixing.
  • 1 tablespoon canola oil Vegetable oil can be used as a substitute.
  • 2 large eggs Eggs should be at room temperature for better incorporation.
  • 1 box boxed cake mix Any flavor cake mix can be used for different variations.
  • 1 teaspoon green food coloring Use gel coloring for best results.

For the Decoration

  • 1 cup heart shaped sprinkles Candy melts can be used as an alternative for decorating.

  • Preheat the oven to 350°F (180°C) and line your cookie sheets with parchment paper or silicone mats.
  • Whisk together the powdered sugar and cornstarch in a bowl, then set aside.
  • Beat the unsalted butter, canola oil, and eggs together until well combined (about 30 seconds).
  • Combine the cake mix into the butter mixture, stirring until just combined. Add green food coloring.
  • Scoop the dough using a small cookie scoop, then drop each ball into the powdered sugar-cornstarch mixture, gently rolling to coat.
  • Arrange the coated dough balls on the prepared cookie sheets, leaving space between them.
  • Bake for 8-10 minutes, watching closely for puffiness and golden edges.
  • Cool on the sheets for 5 minutes before transferring the cookies to a wire rack.
  • Decorate with heart sprinkles using cornstarch and powdered sugar as glue.

Notes

Store cookies in an airtight container. They remain soft for up to 3 days at room temperature or up to a week in the fridge. Can be frozen for up to 3 months.
