Preparation

  • In a large bowl, whisk together olive oil, lemon juice, minced garlic, cumin, salt, and pepper until well combined.
  • Add boneless chicken breasts to the marinade, ensuring they're fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  • Heat your grill to medium-high (about 400°F or 200°C).
  • Slice the California avocados in half, removing the pit. Brush the flesh with olive oil.
  • Place the marinated chicken breasts on the grill. Cook for 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  • Add the avocado halves to the grill during the last 2-3 minutes of cooking the chicken.
  • Let the chicken rest for about 5 minutes, then serve alongside grilled avocados and garnishes.

Notes

Sprinkle with additional salt and a squeeze of lime for an extra zest.
