How to Make Grilled Lemon Chicken

  • In a small bowl, whisk together lemon juice, olive oil, parsley, lemon zest, garlic, salt, thyme, marjoram, and pepper until well blended, creating a fragrant marinade.
  • Pour 1/3 cup of the marinade into a resealable plastic bag. Add the chicken breasts, seal the bag, and gently massage to coat the chicken evenly with the marinade.
  • Allow the chicken to marinate in the fridge for at least 1 hour. For maximum flavor, you can marinate it overnight if time allows while reserving the remaining marinade for later.
  • Set your grill to medium heat, allowing it to warm up properly for even cooking. This should take about 10-15 minutes.
  • Remove the chicken from the marinade and discard the used marinade. Place the chicken on the grill, cooking for 5-7 minutes on each side, aiming for an internal temperature of 165°F, basting with reserved marinade every few minutes.
  • Once the chicken reaches the desired temperature, transfer it to a plate and let it rest for a couple of minutes before slicing.
