  • 1/4 cup Olive Oil Extra virgin preferred
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 4 cloves Garlic Freshly minced
  • 1 tablespoon Oregano Dried
  • 1 teaspoon Paprika Adjust for spice preference
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Red Pepper Flakes Optional, for heat

For the Fresh Salsa

  • 1 cup Cucumbers Diced
  • 1 cup Tomatoes Diced
  • 1 cup Bell Pepper Diced, any color
  • 1/2 cup Red Onion Diced
  • 1/4 cup Parsley Chopped fresh
  • 1/2 cup Feta Cheese Crumble

For Assembly

  • 4 pieces Pitas Warm for easy wrapping
  • 1/2 cup Tzatziki Sauce Homemade or store-bought

Preparation

  • Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add the chicken breasts, ensuring they are well-coated, and let them marinate for at least 15-45 minutes for maximum flavor.
  • Prepare Salsa: In a separate bowl, combine the diced cucumbers, tomatoes, bell pepper, red onion, parsley, and crumbled feta. Drizzle with lemon juice, then season with salt and pepper. Let the salsa sit for a few minutes to meld flavors.
  • Cook Chicken: Preheat a skillet over medium-high heat. Cook the marinated chicken for about 3-5 minutes on each side until golden brown and cooked through; internal temperature should reach 165°F.
  • Warm Pitas: Warm the pitas over a gas flame or in a skillet until pliable.
  • Assemble Tacos: Fill each warmed pita with the juicy sliced chicken, top with fresh salsa, and finish with tzatziki sauce.

Notes

For extra flavor, marinate chicken up to 45 minutes. Store cooked chicken and veggies in the fridge for up to 4 days, and freeze chicken for up to 3 months.
