Ingredients
  

  • - 1 lb large shrimp peeled and deveined
  • - 1 red bell pepper chopped
  • - 1 yellow bell pepper chopped
  • - 1 red onion chopped
  • - ¼ cup olive oil
  • - 2 garlic cloves minced
  • - 1 tbsp smoked paprika
  • - 1 tsp dried oregano
  • - ½ tsp dried thyme
  • - Salt and pepper to taste
  • - Lemon wedges for garnish

Instructions
 

  • Whisk olive oil, garlic, and spices in a bowl.
  • Add shrimp and toss to coat. Marinate briefly.
  • Thread shrimp and veggies onto skewers.
  • Grill over medium-high heat, 2–3 mins per side.
  • Serve hot with fresh lemon wedges.

Notes

- Dice veggies evenly for uniform grilling
- Use large shrimp to avoid overcooking
- Swap veggies or seasonings as desired
