Ingredients
- 1 lb large shrimp
peeled and deveined
- 1 red bell pepper
chopped
- 1 yellow bell pepper
chopped
- 1 red onion
chopped
- ¼ cup olive oil
- 2 garlic cloves
minced
- 1 tbsp smoked paprika
- 1 tsp dried oregano
- ½ tsp dried thyme
- Salt and pepper to taste
- Lemon wedges for garnish
Instructions
Whisk olive oil, garlic, and spices in a bowl.
Add shrimp and toss to coat. Marinate briefly.
Thread shrimp and veggies onto skewers.
Grill over medium-high heat, 2–3 mins per side.
Serve hot with fresh lemon wedges.
Notes
- Dice veggies evenly for uniform grilling
- Use large shrimp to avoid overcooking
- Swap veggies or seasonings as desired
