- 2 tablespoons pumpkin butter store-bought or homemade
- 1/4 cup fresh apple cider
- 1 1/2 ounces silver tequila
- 1/2 ounce orange liqueur such as Cointreau or Triple Sec
- 1/4 cup ginger beer for topping
- Ice for shaking and serving
- Apple slices and cinnamon sticks for garnish
- For the Rim:
- 1 tablespoon coarse sugar
- 1 tablespoon granulated sugar
- 1/2 teaspoon ground cinnamon
- Pinch of cayenne pepper optional, for heat
- Splash of pomegranate juice to help rim stick
Prepare the Glass Rim:
On a small plate, mix the coarse sugar, granulated sugar, cinnamon, and cayenne (if using). Dip the rim of your cocktail glass into a thin layer of pomegranate juice, then into the sugar mixture to coat. Set aside.
Shake the Margarita:
In a cocktail shaker, combine pumpkin butter, apple cider, tequila, and orange liqueur. Shake well until the pumpkin butter is fully mixed.
Add Ice and Shake Again:
Fill the shaker with ice and shake vigorously for about 1 minute to chill and dilute slightly.
Serve:
Fill your prepared glass with fresh ice. Strain the margarita mixture into the glass.
Top and Garnish:
Pour ginger beer over the top to fill the glass. Garnish with fresh apple slices and a cinnamon stick. Sprinkle a little extra cinnamon sugar over the top if desired.
Mocktail Option:
Skip the tequila and orange liqueur. Instead, add 2 extra tablespoons of apple cider and 1 tablespoon of fresh orange juice. Shake and top with ginger beer as usual.
For a mocktail version, skip the alcohol and use 2 extra tbsp of apple cider and 1 tbsp orange juice.
Use high-quality ginger beer for the best flavor.
Make it in batches for parties—just hold off on adding ginger beer until serving.
