Ingredients
  

For the Roasting

  • 1 tbsp Avocado Oil Can be substituted with olive oil or coconut oil.
  • 8-12 oz Sweet Potato Cubed.
  • 1 lb Chicken Breast Cut into bite-sized pieces.
  • 1 tsp Garlic Powder Fresh garlic can substitute (1 clove = 1/8 tsp garlic powder).
  • 1 tsp Onion Powder Can be omitted.
  • 1 tsp Kosher Salt Use sea salt as a substitute if preferred.
  • 1 tsp Chili Powder Adjust quantity to taste.
  • 1 tsp Ground Cumin Cumin seeds can be used as an alternative.
  • 1/4 tsp Cayenne Pepper Optional.
  • 1/2 tsp Ground Cinnamon Can be omitted.

For the Kale

  • 2 cups Kale Leaves Can substitute with spinach or baby kale.
  • 1 tbsp Olive Oil For massaging kale.
  • 1 tbsp Lemon Juice Can substitute with lime juice.

For the Creamy Sauce

  • 1/2 cup Greek Yogurt Use dairy-free yogurt for a vegan version.
  • 2 tbsp Mayonnaise Substitute with vegan mayo or omit.
  • 2 tbsp Chipotle Sauce Use canned chipotles in adobo if unavailable.
  • 1 tbsp Agave Syrup Honey can be used as a substitute.

For the Bowls

  • 2 cups Cooked Brown Rice Can switch to quinoa or cauliflower rice.
  • 1/2 cup Feta Cheese Omit for a dairy-free dish.
  • 1 medium Avocado Can be substituted with guacamole.

Instructions
 

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Toss cubed sweet potatoes with avocado oil and half of the seasoning blend. Spread on a baking sheet and roast for 10 minutes.
  • Toss chicken pieces with remaining oil and seasoning. Add to baking sheet with sweet potatoes and roast for an additional 15 minutes.
  • Massage kale leaves with olive oil, lemon juice, and a pinch of salt.
  • In a bowl, blend Greek yogurt, mayonnaise, chipotle sauce, lemon juice, agave syrup, and salt until smooth to make the sauce.
  • Assemble by dividing cooked brown rice among bowls, layering with kale, roasted sweet potatoes, chicken, avocado, feta, and the chipotle sauce.

Notes

For a fresh twist, try adding a squeeze of lime on top before serving. Use double portions for meal prep.
