Ingredients
  

For the Peppers

  • 4 pieces Bell Peppers Use a mix of colors.

For the Filling

  • 1 tablespoon Olive Oil For sautéing.
  • 1 cup Onion Finely chopped.
  • 1 pound Ground Beef (90/10 lean) Or ground turkey for lighter option.
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Garlic Powder Fresh garlic can be used.
  • 1 teaspoon Red Pepper Flakes Omit for milder flavor.
  • 1 cup Rice Ensure fully cooked before adding.
  • 1/4 cup Parsley Freshly chopped.
  • 1/4 cup Basil Freshly chopped.
  • 1/2 cup Parmesan Cheese Grated.
  • 1 cup Marinara Sauce Good quality recommended.
  • 1 cup Italian Cheese Blend

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • Prepare the bell peppers by slicing off the tops and removing the seeds and membranes.
  • Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Arrange the prepared peppers upright in the dish, nestled in the marinara sauce.

Cooking

  • Heat olive oil in a skillet over medium-high heat. Sauté the chopped onion with a pinch of salt for 3-5 minutes.
  • Add ground beef to the skillet, breaking it apart as it cooks. Stir in Italian seasoning, garlic powder, and red pepper flakes.
  • Remove skillet from heat and fold in the cooked rice, parsley, basil, Parmesan cheese, remaining marinara sauce, and Italian cheese blend.
  • Stuff the mixture generously into each of the prepared bell peppers.
  • Top each stuffed pepper with more Italian cheese blend.
  • Cover the dish with aluminum foil and bake for 30-35 minutes.
  • Uncover and bake for an additional 5-10 minutes until the cheese is melted and slightly golden.
  • Let rest for 2-3 minutes before serving.

Notes

Optional: Garnish with additional fresh herbs for added flavor.
