Ingredients
  

For the Steak Marinade

  • 1 pound Sirloin or Flank Steak Consider chicken or tofu for a lighter option.
  • 2 tablespoons Olive or Avocado Oil Can be swapped with vegetable oil.
  • 2 tablespoons Lime Juice Lemon juice works as a substitute.
  • 1 tablespoon Chipotle Peppers in Adobo Sauce Adjust quantity to taste.
  • 2 cloves Garlic Use garlic powder if fresh isn't available.
  • 1 teaspoon Cumin Coriander is a suitable substitute.
  • 1 teaspoon Oregano Italian seasoning is a good alternative.
  • 1 teaspoon Ground Black Pepper Try other pepper types if preferred.

For the Fajitas

  • 2 cups Bell Peppers Zucchini or mushrooms can be used as a twist.
  • 1 cup Red Onion Yellow onion can be substituted.
  • 1 cup Canned Corn Optional; fresh corn or omit for lower-carb.
  • 1 cup Black Beans Pinto beans are a good substitute, or omit for fewer carbs.
  • 1 cup Baby Tomatoes Regular chopped tomatoes can be used.

For Assembly

  • 2 cups Romaine Lettuce Spinach or mixed greens can be alternatives.
  • 2 cups Jasmine Rice Swap with quinoa or cauliflower rice for a low-carb option.
  • 1 cup Guacamole Homemade or store-bought based on preference.

Preparation

  • Marinate the Steak: In a bowl, mix olive oil, lime juice, chipotle peppers, mashed garlic, cumin, oregano, and ground black pepper. Rub the marinade onto the steak and let it refrigerate for at least 30 minutes or overnight.
  • Prepare Fajita Veggies: Slice bell peppers, red onion, and baby tomatoes and set them aside.
  • Cook Rice: Prepare jasmine rice according to package instructions, or cook cauliflower rice for a low-carb option.
  • Cook the Steak: Preheat a skillet over medium-high heat, add avocado oil, and sear the marinated steak for about 4-5 minutes on each side until desired doneness.
  • Rest Steak: Transfer steak to a cutting board and let it rest for about 10 minutes.
  • Sauté Fajitas: In the same skillet, sauté the sliced peppers and onions for 3-5 minutes until soft.
  • Assemble Bowls: Layer rice, romaine lettuce, corn, black beans, sautéed veggies, and sliced steak in each bowl and drizzle with guacamole.

Notes

Optional: Sprinkle fresh cilantro on top for an extra burst of flavor.
