  • Prep veggies: Chop the onion and celery, slice the carrots, and chop the kale. Having everything ready makes cooking smoother.
  • Sauté base: Heat olive oil in a large pot over medium heat. Add onion, celery, bay leaves, and chili peppers; cook for 5 minutes until onion is translucent.
  • Add carrots: Toss in the sliced carrots and cook for another 2-3 minutes.
  • Combine ingredients: Stir in the soaked black-eyed peas, water, and tomato paste; bring to a gentle boil.
  • Simmer away: Reduce heat, cover, and let simmer for 1 hour, stirring occasionally.
