How to Make Chicken Noodle Soup

  • Begin by dicing the onion and cutting the carrots and celery into bite-sized pieces. Set them aside. Shred the warm rotisserie chicken, ensuring to discard the skin and bones.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Sauté for 5-7 minutes until the onion becomes translucent and tender.
  • Pour in the chicken broth, then add the bay leaf, sea salt, garlic powder, thyme, oregano, parsley, and cracked pepper. Bring the mixture to a simmer over medium-high heat, then reduce the heat to medium. Let it simmer for about 20 minutes.
  • Stir in the shredded chicken and dry pasta. Cook for an additional 10-15 minutes or until the pasta is tender and the vegetables are soft.
  • In a small bowl, prepare the cornstarch slurry by mixing the cornstarch with cold water until smooth. Ladle a bit of the hot soup into the bowl, then whisk in the slurry until blended. Return this mixture to the pot and stir, simmering for 2-3 minutes until the soup thickens slightly.
  • Remove the bay leaf from the pot. Taste the soup and adjust the seasoning if necessary. Serve hot and enjoy.
